BEAUTIFUL BEET, BRIE & CHORIZO BREAKIE

Already cooked Beets - I have Golden & Striped here
All in the same large non-stick skillet:
Dollop 1 tbsp of butter.
In one corner, throw in the chopped beets.
In another corner, fry the chopped chorizo.
In another, 2 egg whites, and crack pepper on them.
I cut the egg whites in half when nearly cooked, flipped over to brown the peppered side, and then placed Brie in the middle and folded over, like 2 mini stuffed omelettes.
Plate like the picture. Exactly like the picture, when everything is browned nicely, otherwise it will look like shit, and your morning-after date will leave without eating.
Garnish with Green Onion.
Eat it, as I am doing now. I am getting quicker with this blogging food business. I am literally eating this breakie right now as I write you this really fucking easy, gluten-free recipe that has ingredients you may not expect together.
