Fresh Tomatoes - using a variety of heirloom steps it up a notch
Spaghetti Squash
Roasted Garlic (pre-prepared or roast at the same time as the squash)
Olive Oil
Fresh Basil would be good, looks like above I didn't use it...dumb move.
Goat Cheese

First off, that beautiful, cylindrical, yellow orb of squash...cut it in half and get it baking, face down in water in the oven. Some people say that you can microwave it, but I never have, because it sounds like the stupidest idea ever. And a kitchen explosion would be expected, so if you are gonna do it, at least set up a video camera. And wear googles.
Blanch your tomatoes briefly to get the nasty, annoying skins off. I'm not in the mood to tell you how to do that, so google that shit. It's easy enough. And you'll feel smarter after you google it, as well as avoiding one or two more insults from me, directed at you, while trying to describe something that you should already know, if you are reading my recipes.

In a decent-sized skillet, sauté your onions, adding your mushrooms too, until some nice browning happens, in olive oil. Add your skinned tomatoes (chop up roughly first, and then smash/squish them in the pan, this will help if you have any sexual tension to take care of).

Add in your roughly chopped roasted garlic, some chopped fresh basil, and season with salt & pecker if you want to. Let all of these things simmer, add some more olive oil, and simmer a bit more, allowing the mushrooms to really take on the tomato and garlic flavours.

When the Squash is done in the oven, take it out, wear an oven mitt if you like the skin on your hands, and using a fork, scrape out the strands into something, anything, I don't give a fuck.
Portion some into your favourite eating bowl, top with the pomodoro sauce you have been simmering, and plop on a chunk of goat cheese.
More fresh basil on top would balance it out too. And it!
