Mango Salad:
Mango (duuuhhh)
Peanuts or Cashews
Red Pepper
Green Onion
Rice Wine Vinegar
Lime Juice

Fish Sauce
Cracked Sea Salt
Red Chili flakes or Fresh Jalapeno or Chili Oil

Cut up & chop ingredients. Make dressing in a pourable container. Taste & season accordingly. Pour over salad stuffies and toss. Serve over a chiffonade of lettuce. Or not. Garnish with coriander.

Haddock Lettuce Wraps:
Haddock (yes. really.)
You could use Shrimp, Crab, or any other protein. I'm not your mama,
I'm not gonna tell you how to live your life...much.
Napa Cabbage, Boston Leaf Lettuce, Romaine Leaves...whatever your wee desires
Red Pepper
Onion of choice
Bamboo Slices
Water Chestnuts
Any Veggies you want (zucchini, carrot...etc)
Gluten-free Soy Sauce
Sesame Oil
Homemade Chili Oil (see KK's Cupboard)
Coriander - fresh only
Cracked salt to taste

Wash & prepare your lettuce to use like taco shells. That's the easy part.

Saute the rest of the ingredients, breaking up the fish as you go. But don't mash the fuck out of it. You're not making fish cakes. Yet. Maybe if you fuck up, and mash to hard, cause you're one angry fuck, then yea, you are now making fish cakes.
When all sautéed, and seasoned with soy sauce, sesame oil, chili oil, fresh coriander...let cool a bit, and then scoop into your lettuce shells.

Serve along side the Mango Salad. Just like the picture. Don't deviate. Or a curse will fall upon you.
